I'm taking a break from Davy Jones' locker to work on my S-100 s-boat. Did the s-boats have antifouling red below the water line like in the Squadron book? I've seen it done both ways on models. Which is correct?

from what I've read about this, late war boats (like your S-100 and some late S-38b) used the red anti-fouling paint. But there might have been (and I bet there were) exceptions due to material shortages or whatever. Choice is yours. More important aspect is, that S-100's were never painted with additional camo; so "Schnellbootweiss" with dark grey deck only !

I'm sorry, Kenny. No Italian red & white stripes on S-100. I'm not 100% sure, but I think there was no S-100 in the Mediterranean theatre at all. If there has been any "Kalotte"-boat (armored bridge) with stripes, it was an S-38b serving in the Black Sea.
The above link also shows the rebuilt of the Revell kit to an early S-38 done by the same artist. Along with Squadron/Signal the best reference you'll probably find.
For an S-100, there is almost nothing special to add to except some individual insignia.
An excellent example is Joseph Neumeyer's work on "Digital Dioramas".
