I've looked closely at the measurements of both and I put before those more knowledgeable than me, in 1/700 scale, would there be any noticeable differences in the ships?

Kenny, this isn't my area of expertise (still trying to find out what is, actually ), but after "Googling" around a bit, I found this opinion:

Gator, albeit slight in 1/700 scale, the ship profiles are definitely different in design...Victory ship profiles have a sleek, “raked” bow, a raised forecastle, and a “cruiser” stern, markedly different from a Liberty ship profile.

I just saw that Loose Cannon makes a resin Victory ship, so the Baton Rouge Victory is alive again.
