I am trying to build this models rigging.Confused about what scale to use in regards to turnbuckles etc. When looking online I see generic cables and fittings that seem to large for this small sub.I am guessing that a turnbuckle for the Bismarck would be out of place on this U boat? I have some 1/48 turnbuckles look look nearly right should I stay exclusively with 1:350 aftermarket parts?

Ahoy David.

There are 1:350 scale turnbuckles you can buy for your build.

North Star 1/350 Turnbuckles & Eye Bolts (NSA350070)

I would think that the 1:48 scale ones for this tiny model may
be too big.

Cheers,

Just my 2 p, but I would think that rendering a turnbuckle in any scale that small would be negligible. I know that when doing WWI aircraft in 1/72, a turnbuckle there would not be noticed well at all in that scale. 1/350 - you wouldn't even know it was there. (Again, just my opinion.)
