Do SkyWave or Pit Road still produce the old SkyWave kits, or will the supply of SkyWave kits trickle out as time goes by?

Sure they do; check out the ModelShipwrights NEWS section - the 1/700 scale destroyers Takanami (Yugumo) and Kamikaze are slated to be re-released in July. I expect others will be reissued in the coming months too.
